Vines and Cellar
Grape varieties: Syrah, old vines of 30+ years, Mourvèdre 60 year old. Terroir: Vineyard nestled in the hills above the bay of Marseille. Light stony limestone soil.
The grapes are harvested manually in small cases. The bunches are de-stemmed and lightly crushed before being vinified in temperature controlled stainless steel vats. The grapes are macerated for one month before the wine is lodged in new and one year old oak barrels. The wine is fined using egg whites and is non-filtered.
Tasting
Robe : A sumptious dense black colour. Nose : The nose which is complex and rich; red fruits and spices dominated by powerful aromas of the meditarranean scrubland (garrigue). Palate : The finish is longlasting and pleasant. Nice concentration and extraction without any dippiness, good quality silky tannins give length and focus.
The finish on notes of black olives and hints of seaweed brings evokes the terroir on the Meditarranean coast.
Pairing
It may be enjoyed with a Provencal stew, rabbit stewed in red wine or barbecued Tuna.
