Light stony limestone soil. The grapes are picked manually and transported to the winery in small cases. Partly vinified in temperature controlled stainless steel vats and partly in new oak barrels. Cold maceration. Malo-lactic fermentation during the raising on fine lees. The wine was bottled with a light fining, no filtration and just before the Summer following the harvest.

Tasting

Robe : A bright and attractive colour with hint of green.
Nose : Rich and subtle : aromas of dried fruits and yellow fruits.
After aeration one detects acacia, honey and a slight mineral touch.
Palate : On the pallet added notes of liquorice, coinces and acacia flowers come through while hints of wild flowering thyme are reminiscent of the terroir of the hill of the Côte Bleue.

It is well rounded and fresh, all together rich and fat. This is a wine which allies being delicate and fine with volume and structure.
